
This a rich comforting and meaty dish that is surprisingly easy to make. And with Arrabbiata seasoning, it's got a nice punch from the chillies. But be patient ok cos the sauce needs a long simmer time.
Ingredients
- Diced onions, garlic, carrots and celery (make this a fine dice)
- Tomato puree, about 1/2 of a large can
- 2 cans of diced tomatoes
- 500grams of minced lamb
- A teaspoon of sugar
- Fresh basil (5 or 6 leaves)
- Goccia Umbra Arrabbiata Spice Mix
- Penne (500grams) , though of course you may substitute for other pasta of your choice
- Salt & Pepper
- Dry or fresh parsley
Method
- In a generous amount of olive oil, sauté the diced onion, garlic, carrots and celery for 5 minutes, stirring frequently
- Add the tomato puree and cook till the oil separates
- Add 2 tablespoons of Goccia Umbra Arrabbiata Spice Mix and cook for 5 minutes on a low heat
- Toss in the minced lamb and stir for a few minutes before adding the canned tomatoes
- Bring to boil and add the sugar, and season with salt and pepper
- Add the basil as this also lends nice flavour to the sauce
- Cook on a low simmer till the sauce is nice and thick and the oil separates
- Add in the cooked Penne, stir well, garnish with parsley and serve
