
Angel hair pasta is always a nice change from the larger sized pasta and soaks up the sauce really well.Plus it cooks fast too, making it very convenient to cook.
Here is a colourful dish sent in by Geri, and uses Goccia Umbra Aglio Olio Peperoncino Mix.
Ingredients
- One medium sized onion , diced finely
- Bacon (any type that you prefer) cut into small slices
- 1 tablespoon of Goccia Umbra Aglio Olio Peperoncino spice mix
- A pack of cherry tomatoes
- Salt & pepper
- 400 grams of angel hair pasta
- Parsley (fresh or dried)
Method
- Use a generous amount of olive oil and saute' the onions for a minute on low heat
- Add the bacon and let some fat render (should take 2 minutes)
- Now add the Goccia Umbra Aglio Olio Peperoncino spice mix, lower the heat and allow the flavours of infuse into the oils, cook for 2 minutes
- Add the cherry tomatoes (use fresh or roasted ones if you prefer)
- Salt and pepper as required
- Now turn off the heat and cover,allow the spices to continue to flavour the oil
- Toss the pasta into salted boiling water and cook till al dente, then drain well
- Get the cooked pasta into the sauce, stir well, garnish with parsley and serve up
